We had us some yummy “cupcakes” for dinner. Yes, I am giving up sugary sweets for the month of April, but I couldn’t pass up making my favorite mini meatloaves, disguised as cupcakes frosted with tinted mashed potatoes. Decorated with bits of zucchini tinted with food coloring.
Lil’Miss loved the tasty treat!
Today as I was showering I put Lil’Bean in his crib to keep him safe from his big sister. As he often does when he isn’t being held, he started crying. When I went in to get him after showering I found that his sister had given him a gift. Two big spiders.
I am sure was trying to comfort him when he was crying. She has fascination for spiders these days due to the classic nursery rhyme song, The Eensie Weensie Spider. Of coarse she is yet to encounter a real spider. I guess you are never too young to play a little April Fools prank on your little brother!
Happy April Fools!
Here is the awesome recipe we used for our meatloaf cupcakes. Super simple and good eats. Again this recipe is from my MIL ward cookbook.
1lb of hamburger
1 C milk
1 pkg. Stove Top stuffing mix
Mix hamburger with Stove Top stuffing and milk. Put in muffin tin and make a thumb print in the middle. Dab a bit of your favorite barbeque sauce (or kethup)on top and cook for 30 minutes at 350 degrees. Take out and put grated cheese on top and put back into the oven for 3 minutes.
