1 ¾ cup dry couscous
2 cups chicken broth (or 2 cups water and 2 bullion cubes)
1 cup seasoned browned hamburger
1 cup garlic hummus
parmesan cheese for garnish
6-8 bell peppers with tops cut off and seeds removed
Boil six cups of water on the stove, and place the peppers in the water for a brief boiling bath to soften the fruit, but not long enough to make it floppy or soggy. In another pan bring the chicken broth to a boil. When it begins boiling take it off the heat and add couscous and cover. Allow the couscous to sit for five minutes. Once the couscous has fully absorbed the water add the hamburger and hummus. Then spoon the couscous mixture into the peppers and top with parmesan cheese. Bake at 375 degrees for 20 minutes.
