Chicken Fingers With Lemon Mayonnaise
1 ½ lbs boneless skinless chicken breast cut into “fingers”
1 envelope ‘shake and bake’ type seasoned crumbs
2 tsp dried dill (or tarragon)
1 tsp freshly grated lemon rind
½ cup mayonnaise
1 Tbs fresh lemon juice
Empty seasoned crumbs, dried dill and lemon rind into a plastic bag. Add chicken fingers 5-6 at a time into crumb mixture and shake and cover then place on an ungreased baking sheet.
To prepare lemon mayonnaise combine lemon juice and mayonnaise and use as a dipping sauce.
Lil’Miss loved these! Lately she has been a picky eater and it has kind of been driving me crazy. They tasted a little bit like chicken nuggets, but much better for you, not processed meat and baked not fried. We definitely will be making these again in the near future.
