Four plus months ago, I was happily awaiting the arrival of our new addition. (click here for those details) I had another month and a half before Lil’Bean was supposed to arrive and I had a lot of things that needed to get done. One of the things I had on my list was to pick up 80 lbs of chicken I had purchased bulk from Zaycon Foods. My plan was to can half of the chicken and freeze the other half. I was excited for the new adventure of learning how to can using a pressure cooker.
Well I was supposed to pick up the chicken on Saturday, Wednesday of that week, my water broke six weeks early!
My sister-in-law Karen came to the rescue. Since I was hooked up to monitors in the hospital waiting for my premature baby to be born, there was no way I was going to break away for an hour or so to pick up the chicken and get started on my project. Karen picked up my chicken along with 80 lbs that she had purchased.
She is a wonder woman. She canned my chicken, and trimmed and bagged the remainder for the freezer. She also canned her own chicken and I think even helped a friend! I think she canned over 80 lbs of chicken, now that is a lot of work!!! Thank you Karen, every time I use our canned chicken I think of your dedication and love when I was helpless in the hospital.
Well Zaycon was coming around again this spring with their chicken sale so I decided to give it a whirl. We had used up a great portion of the chicken Karen had canned in the fall, so I wanted to replenish our supply.
